Loaded Potatoes Casserole

Ingredients:


4 lbs gold potatoes  peeled and halved
1/2 cup cream cheese
1/2 cup cream
1/4 cup butter
1/2 cup evaporated milk
1 teaspoon salt
1/2 teaspoon  ground black pepper
1 1/2 cups shredded cheddar cheese, divided
7 slices bacon, cooked, chopped, divided
1 cup  sliced green onions divided
1/2 cup shredded cheddar

Preparation

Place the potatoes into a large pot and cover with salted water. Bring to a boil over med-high heat.  Cook until tender, then drain well.
Preheat oven to 350 degrees F. Lightly grease a baking dish.
Combine 1 1/2 cup Cheddar cheese, the cream cheese, the evaporated milk, the butter, the sour cream, the salt, and the black pepper in the pot with the potatoes
Mash with a potato masher until smooth. Then spread the potato mixture into prepared baking dish.
Stir in half the bacon. Spoon mixture evenly into the baking dish (Use a spatula or fork to make an irregular surface).
Bake in preheated oven for 20 minutes.  Top with remaining cheese, bacon and green onions. Bake for 5 more minutes to melt cheese.
