Salmon Penne Pasta

Ingredients:


3/4 lb penne pasta
2 teaspoons flour
2 tablespoons butter
2 shallots
1 garlic clove
½ cup white wine
1 cup cream
1 cup spinach
1/2 cup parmesan cheese
1 tablespoon chive
1 tablespoon basil
2 cups salmon cubed
Rocket salad

Preparation

Precook the salmon.
Cook the pasta al dente in boiling water according to package instructions. Drain and set aside.
In a frying pan, heat the butter. Add the garlic and the onion and sauté for 1 minute. Sprinkle with flour and cook 1 minute more.
Pour the white wine and whisk the mixture. Add the cream and bring to a boil. Stir in the spinach, chive, basil and parmesan cheese.
Add the precooked salmon and the pasta and cook for 1 minute more.
Serve and garnish with rocket salad.
